Award Winning “The Undead” vegan chili

My #vegan chili “The Undead” won the #chili cookoff competition at work!! How cool is that 😃


People said mine had the biggest kick and that they enjoyed that the spice profile was complex and hit all the notes instead of just being super hot.

I forgot to take a picture until after many people already ate it. Because of that, the liquid to chili ratio in the picture looks off, compared to how it was at the start.

This recipe is really just a guess at what I did so follow your instincts.

“The Undead” recipe aka Melanie’s chili sin carne



Saute 1 whole white onion, 3 tbsp garlic, and 2 tbsp allepo chilli pepper, 5 fresh jalopeno, & 4 fresh adobo peppers

Add for boiling and simmering —

4 cans water and 4 tbsp better than boullion vegetable

3 tbsp harissa spice

2 tbsp “taco seasoning”

1 tbsp black pepper

1 tbsp cumin

2 tbsp mollasses

2 tbsp salt

1 tbsp tomato paste

1 tbsp miso paste

1 can chopped tomato

1 can chipotle adobo peppers

1 can corn

1 can kidney bean

1 can black bean
